Cortisol and insulin are always in a delicate balance. If cortisol is too low, insulin can become elevated, leading to weight gain and an increased risk of diabetes. On the other hand, if cortisol levels remain chronically high, this can lead to a decrease in insulin sensitivity and an increased risk of metabolic syndrome.
This is also why eating first thing in the morning or after a workout is a good time to do so. It's because the insulin spike will counteract the cortisol, as well as being in a fasted state, so nutrients are more likely to be stored as glycogen for later activity or used for immediate energy.
